For the Chocolate Cake

  • 200 gm dark chocolate (about 60% cocoa solids), chopped
  • 200 gm butter, cubed
  • 85 gm self-raising flour
  • 1 tbsp instant coffee granules
  • 200 gm golden caster sugar
  • 200 gm light muscovado sugar
  • ¼ tsp bicarbonate of soda
  • 85 gm plain flour
  • 25 gm cocoa powder
  • 75 ml buttermilk
  • 3 medium eggs
  • 50 gm grated chocolate or 100g curls, to decorate

For the Ganache

  • 200 gm dark chocolate (about 60% cocoa solids), chopped
  • 2 tbsp golden caster sugar
  • 300 ml double cream

Recipe / instructions

  • Heat the oven to 160 degrees C. Spread and line a 20 cm round cake container (around 7.5 cm deep). 
  • Put 200 gm chopped dark chocolate in a medium container with 200 gm butter. 
  • Blend 1 tbsp instant espresso granules into 125 ml cold water and fill into the dish. 
  • Heat through over a low warmth just until everything is dissolved – don’t overheat. Or you can also melt in the microwave for around five minutes, mixing in between. 
  • Blend 85 gm self raising flour, ¼ tsp bicarbonate of soda, 85 gm plain flour,  200 gm golden caster sugar, 200 gm light muscovado sugar, and 25 gm cocoa powder, and beat out any bumps.
  • Beat 3 medium eggs with 75 ml buttermilk. 
  • Pour the softened chocolate blend and the egg blend into the flour blend and mix everything to a smooth, very runny consistency. 
  • Empty this into the cake containers and bake for around 1 hr 25 minutes to 1 hr 30 minutes. You can insert a toothpick into the middle to check if the cake is baked properly or not. The toothpick should come out clean or with a couple of crumbs.
  • Leave the cake to cool in the cake container for around five minutes and then invert out onto a wire rack to cool totally. Cut the cooled cake on a level plane into three. 
  • To prepare the ganache, put 200 gm slashed dark chocolate in a bowl. Empty 300 ml double cream into a bowl, include 2 tbsp golden caster sugar and warmth until it reaches boiling point. 
  • Remove from the warmth and pour it over the chocolate. Mix until the chocolate has dissolved and the blend is smooth. Cool until it is a little thicker yet at the same time pourable. 
  • Sandwich the layers along with only a tad bit of the ganache. Pour the rest over the cake letting it roll down the sides and smooth over any holes with a spatula or knife. 
  • Decorate the cake further with 50 gm grated chocolate or 100 gm chocolate curls. The cake will be gooey and moist for around three days.
