Qatayef – an eid special

Qatayef

 

Qatayef is an Arabian and Syrian dessert served during ramadan and eid. These are stuffed pancakes garnished with chopped nuts.

Ingredients :
For batter :

1. Plain flour ( maida) – 1 cup

2. Semolina – 3 tbsp

3. Sugar- 4 tbsp

4. Milk powder- 3 tbsp

5. Salt – 1/2 tsp

6. Yeast mixture – (mix the active yeast with some water and a pinch of sugar, rest it for 5 minutes, yeast mixture is ready )

7. Water – as required for batter

For stuffed cream :

1. Homemade fresh paneer – 2 tbsp

2. Milk – 500 ml

3. Sugar – 1/4 cup

4. Rose essence – 1 tsp

5. Corn flour mixture – mix 2 tbsp corn flour with some milk mix well till no lumps remain.

For Qatayef pancake :

Ghee for greasing

For Garnishing :

Mix dry fruits

How to make :

In bowl mix all batter ingredients, mix well till the batter is of a pouring consistency .

Cover the batter and keep it in a warm place for 1 hr.

Now the stuffing cream:

Boil the milk in pan, add sugar, crumble the paneer and add rose essence, mix well. Add corn flour mixture, cook for 2 min on low to medium flame, remove from heat keep it cool down completely.

After an hour the fluffy batter is ready, whisk well.

Grease the tawa with ghee, pour one big spoonful of the batter on it, first 30 seconds cook on high flame then cook on low to medium flame for 5 minutes or till it is well cooked, cook only on one side , take out on a piece of cloth and also cover it with cloth. One can make eight Qatayef pancakes with this batter.

Fold the pancake press tightly and pack it filled the prepared stuffing cream and garnish with dry fruits .
