Do you have an egg dish that you can eat for breakfast, lunch and/or dinner? I love eggs and they make the easiest quick fix dishes that are quite healthy too. ? This is inspired by the Thai fried egg salad / Yam Khai Dao with a smattering of crunchy fresh veggies. I've added some of the pimenton oil in which I fried the egg along with a version of green chutney which brings a kind of green Thai curry flavour to the dish. ? You can quarter the fried egg so it's easier to eat a piece of the fried egg with some of the veggies in one large (and perfect) bite ? . I'm absolutely love the colours on this dish and can't wait to make it again soon! I'll share the recipe on the blog soon. . Zippy Lemon Orzo Pasta Salad for when you want sunshine in a bowl!⠀ Lots of crunchy veggies, pasta and a fabulous lemon dressing. Let all of that sit and mingle in the fridge for a couple of hours so that every bite is amazeballs.⠀ Its semi-healthy, mostly clean-eating style, and a brand new way to eat nice.⠀ ⠀ Here's the recipe:⠀ ⠀ For the Salad:⠀ ⠀ 3/4 cup dry Orzo Pasta⠀ 1 teaspoon Olive Oil⠀ 1 cup frozen or fresh Corn Kernels⠀ 1 cup Broccoli Florets⠀ 2 cups Cherry Tomatoes, halved⠀ 1 Red Bell Pepper, deseeded and diced⠀ 1 cup fresh Lettuce or baby Spinach⠀ Feta for topping (optional)⠀ For the Salad Dressing:⠀ ⠀ 1/4 cup extra Virgin Olive Oil⠀ 2 tablespoons Lemon Juice⠀ 1 teaspoon Lemon Zest⠀ 1 teaspoon Vegan Mayonnaise (or regular mayonnaise)⠀ 2 tablespoons Honey or Maple Syrup⠀ 1/2 teaspoon Paprika or Chilli Powder⠀ 2 Garlic Cloves, minced or grated⠀ 1/2 teaspoon Salt⠀ ⠀ Pasta: Cook the pasta in salted water according to package directions till al dente. Drain, wash with cold water to cool the pasta and set aside.⠀ Prepare Veggies: Heat olive oil in a pan and roast the corn kernels on high heat till slightly charred. Remove the corn, and add the broccoli to the pan. Cook the broccoli for 2-3 minutes till slightly soft, but still crunchy.⠀ Combine: Add cooked pasta, corn, broccoli, tomatoes, bell peppers, lettuce and feta (if using) to a large bowl. Whisk together all the ingredients for the salad dressing in another jar or bowl, and pour all over the salad. Mix well and refrigerate for a few hours before serving.⠀

With the temperature rising higher by the day, we are just munching on the light and refreshing salads / fruits and hydrating with loads of water and fresh juices. . . This is a fairly simple salad we are having for lunch, made with ‘Whatever was available’ handy – Boiled Chickpeas, English Cucumber, Red Bell Pepper, Lettuce, Mango, Pomegranate Arils, Mint Leaves and Grated Carrot.
