Do you have an egg dish that you can eat for breakfast, lunch and/or dinner? I love eggs and they make the easiest quick fix dishes that are quite healthy too. 🍃 This is inspired by the Thai fried egg salad / Yam Khai Dao with a smattering of crunchy fresh veggies. I've added some of the pimenton oil in which I fried the egg along with a version of green chutney which brings a kind of green Thai curry flavour to the dish. 🌿 You can quarter the fried egg so it's easier to eat a piece of the fried egg with some of the veggies in one large (and perfect) bite 😁 . I'm absolutely love the colours on this dish and can't wait to make it again soon! I'll share the recipe on the blog soon. . Question for you: So what's your most favourite egg dish that you can eat any time of the day? . . . . #lightsabre #eattherainbow #eattherainbow

There's nothing like a bowl full of crunchy, savoury-sweet, fresh salad on a hot summer day. With the temperature rising higher by the day, we are just munching on the light and refreshing salads / fruits and hydrating with loads of water and fresh juices. . . This is a fairly simple salad we are having for lunch, made with ‘Whatever was available’ handy – Boiled Chickpeas, English Cucumber, Red Bell Pepper, Lettuce, Mango, Pomegranate Arils, Mint Leaves and Grated Carrot. All tossed together in a summery Orange Vinaigrette made with a kick of Cayenne Pepper and served on a bed of lettuce leaves. Simple, filling, refreshing and it took me just 10 minutes to put this all together. 😀 . . Also, featuring on my wrist, is the luxurious yet affordable Classic Petite Black Melrose from Daniel Wellington! Also, DW has a new store at High street phoenix, lower parel! Use my code ‘NITHYA15’ to avail a 15% off on all purchases!
